Yerba mate is widely cultivated evergreen tree and is a member of the holly family with holly like leaves that are somewhat leathery growing near streams in the wild. The flower is white and produces small red berries but it is the Ilex’s leaves that are used medicinally. Yerba mate in South America is considered a national beverage.

Harvesting yerba mate is done between May and October, when the tree is full of leaf picked every third year to ensure the crop. Yerba Mate has been used medicinally as a diuretic, tonic, and central nervous system stimulant. In Europe yerba mate is used for weight loss, as the ideal slimming remedy that facilitates loosing weight in a natural way by distressing feelings of hunger and thirst.

The primary active chemical constituency of yerba mate is made up of .03% to .02% caffeine, theobromine, theophylline, saponins, and 10% chlorogenic acid. Sterols resembling ergosterol and cholesterol are also present in yerba mate. In addition, yerba mate is a rich source of minerals, and 15 amino acids are present as well in the leaves. The antioxidant properties demonstrated by Yerba Mate were reported in two clinical studies showing its high antioxidant values linked to rapid absorption of known antioxidant phytochemicals found in the leaves. Saponins are a group of phytochemicals with known pharmacological activities, including, as the latest research shows on yerba mate, stimulating the immune system.
